Baked Mozzarella Lemon Surprises

MIND BLOWING!! I first tried these in Italy, such a simple yet stunning canape or starter...It has the most beautiful aroma and melty gloopy lemon infused cheese, then a hidden surprise inside!! YOU have to make this!!

1 large lemon, top and tailed then sliced into 4 +4 large lemon leaves (optional)
4 x baby Mozzarella balls, or one large one torn up!
1 anchovy, cut into 4 (buy the best quality ones, so no fishiness) OR use a basil leaf for vego option!
freshly milled black pepper, dried chili flakes would be a great addition here too!

Preheat oven 170C
Wash your lemon then using a sharp knife cut the top + bottom off the lemon, slice into 4 (2 cm thick)
Carefully scoop out the pulp and seeds in the middle of the slices. Keep this for lemon water!
Arrange lemon rounds on top of the lemon leaves on a baking tray.
Place torn Mozzarella in the bottom, then a small piece of anchovy OR fresh basil, then top with more mozzarella, sprinkle with black pepper.
Bake for 10 minutes, until cheese is melted, serve immediately with a chilled glass of vino! xx
